Avocado Oatmeal Raisin Cookies

Ingredients:

  • 1 Large Ripe Avocado, Peeled, Seeded, and Diced
  • 2/3 Cup Good Quality Creamy Peanut Butter
  • 1 Egg
  • 3 Tbs. Honey
  • 3/4 Cup Quick Cooking Rolled Oats
  • 1/2 Tsp. Baking Powder
  • 1 Cup Raisins
  • Finely Chopped Pistachios or Toasted Pumpkin Seeds (for Garnish)

Assembly:

  1. Preheat oven to 350 Degrees. Spray heavy baking sheet with non stick cooking spray.

  2. Puree diced avocado in bowl of food processor until creamy. You will require 1/3 Cup of pureed avocado.

  3. Combine pureed avocado, peanut butter, honey and lightly beaten egg. Beat until creamy.

  4. Combine oats and baking powder in small bowl. Stir with whisk to combine. Add to wet ingredients. Stir until well combined. Add raisins and stir until incorporated into wet mixture. (Dried cranberries and white chocolate chips can be substituted for raisins)

  5. Place heaping Tablespoons of batter on prepared baking sheet. Flatten slightly with damp hands or a fork. Sprinkle with chopped pistachios or pumpkin seeds. Press lightly into dough. Bake on upper rack of 350 oven for 12 to 15 minutes until lightly browned. Remove to rack to cool.
